Slow Cookers, aka Crock Pots, are my best friend lately.  I had to go buy another one recently because someone bent the one I had.  It will probably still work but I didn’t want to risk it today…plus, two is better than one, no?  I think yes.  Especially when family and friends comes together.  Making dinner, which today is Slow Cooker Pot Roast with Veggies, is in the bag!

For this meal, I use two roasts that way we’ll have leftovers.  Kids like that.  Heck, I like that.  Less cooking on my end and that makes me happy.

Not only do slow cookers do all the work for me, they also make the roast so tender that it shreds with almost no effort!  It’s almost like having a night off.  Almost.

Slow Cooker Post Roast

This is the slower cooker I bought and used when I made today’s Pot Roast.  It’s a 7 quart Crock Pot Smart Pot and I am so in love with it!!!

There are different sizes and I am seriously considering getting a third one, a smaller sized one for when I don’t have a humongoid meal to prep!

When I do convince my hubby to get it, I want this one 2.5 quart one because it’s got some wonderful features! And, of course, it’s totally cute!!

Instructions
  1. Season roast with salt and pepper on both sides. Place in slow cooker.
  2. Add carrots and potatoes.
  3. Sprinkle soup mix and beef bullion powder over roast and veggies.
  4. Mix red wine with cream of mushroom soup. Pour over roast and veggies.
  5. Cover and let cook on high for 6 hours. Stir midway through to move roast and veggies around. Recover and let finish cooking.
  6. Enjoy.
Recipe Notes

*Red Wine:  If you do not have red wine, it's okay to use water in it's place.

  1. I made this for dinner last night! But I want to try this recipe, it sounds much tastier. I usually just throw in the potatoes carrots and meet and call it good. Haha
