Cooler, shorter days are the norm this time of year. It’s perfect weather to make sweet treats for the family to munch on as you snuggle up. Take this Festive Eggnog & White Chocolate Popcorn for example. It’s super easy to make, delicious and perfect for family movie night!

Every year, I buy a container of Eggnog as soon as it hits my local grocery store. Not everyone in my family likes it but I get it anyway because I do. A small part is for nostalgic reasons. You see, growing up, my grandmother would buy some of it every year and it never went to waste! We guzzled it down like nobody’s business, it was just that good. Nowadays, I don’t overindulge in it but I do like to have a glass occasionally and it’s still just as delicious!
Aside from drinking it, I like to use it in recipes as well. Around here, we have a bit of a sweet tooth and are big on snacking so today, I decided to to make this Eggnog & White Chocolate Popcorn since we are planning on watching a movie tonight.
One of the things I love about this snack is that it has a mild eggnog taste, which works well with the white chocolate, even making it enjoyable for those that dislike eggnog! If there are some super finicky ones around, you could keep the eggnog as a secret ingredient 😉
A note about making this snack. It doesn’t take very long to make but there are a couple of things I recommend and think you should be aware of when proceeding. First off, it’s a lot easier and faster when you chop up the chocolate bark coating when it comes to melting time. The bark comes packaged in 2 oz bars, which is perfect as you’ll need three of them for one bag of popcorn. As you can see in the picture below, I used the Ambrosia brand which can be found in most grocery stores or Wal-Mart. It’s easier to chop up two bars for the 4 oz and the one bar for the 2 oz. Just keep them separated as you chop them up.
When the time comes to heat up the 4 oz of chocolate with the eggnog, it won’t be a smooth, runny chocolate consistency like what we’re used to seeing. For some science-y reason, combining the chocolate and eggnog thickens things up and the mixture will start to separate as it heats up. Every microwave varies and in mine, it only took about a minute or just over it to get it hot enough to melt. Use a silicone spatula to stir well then allow it to cool for a bit, enough to handle with your hands but not cold. The mixture will look like the picture below. Deceiving isn’t it…just like a scoop of mashed taters!
The mixture will be thick but pliable and once it’s cooled enough to handle, use your hands to begin mixing it with the popcorn. It will want to stick to the bottom of the bowl but you’re the boss. Continue mixing and rubbing it onto the popcorn until most of it is dispersed throughout. Let it rest as you melt the remaining 2 oz and move along according to the directions. If you’re having a nice sized crowd, this recipe can be doubled easily! I like to have cute disposable paper bowls to serve it in…makes everyone feel special with their own little container!
I use melted chocolate in a lot of my recipes and one of the items I find invaluable is this little container. It comes with chocolate wafers inside but the container is reusable. It is sturdy and holds it’s shape in the microwave during the chocolate melting process. Plus, it doesn’t bubble up! I purchased a few to keep on hand. Best. Decision. Ever. A word of caution: Eggnog & White Chocolate Popcorn is ADDICTIVE!!! And actually, the hardest thing by far is deciding which movie to watch! For that, of course, you’re on your own 😉
Festive Eggnog & White Chocolate Popcorn
- 1 bag Kettle Corn, Microwavable
- 6 oz White Bark Chocolate Coating, divided and chopped
- 1 tbsp Eggnog
- 1/2 cup Powdered Sugar
- 1 tsp Green Sanding Sugar
- 1 tsp Red Sanding Sugar
- 1 tsp Gold or Yellow Sanding Sugar
In a gallon sized zip lock bag, add powdered sugar and all three sanding sugars. Zip and shake to combine. Set aside.
Pop popcorn according to directions, pour into a large bowl. Toss/shake to allow unpopped kernels to fall to the bottom. Using hands, transfer popcorn to another bowl and discard unpopped kernels. Repeat as necessary until all remaining kernels are gone.
In a microwavable bowl, combine 4 oz of chopped white chocolate and eggnog. Microwave for minute, or until melted, then stir well. Chocolate mixture will have a mashed potato look to it when ready. Allow to cool to the touch, then pour on top of popcorn. Using hands, gently rub popcorn with coating.
Melt remaining 2 oz of chocolate being careful not to burn. Drizzle over popcorn and stir with a silicone spatula until combined well.
Pour popcorn into zip lock bag, close and gently shake to combine, turning upside down to help sugar mix get all over popcorn.
Devour immediately or store in an airtight container for up to two days.
