My anniversary is coming up in a few days and I made some Chocolate Strawberry Rice Krispy Treats.  With Sprinkles! Yay!!

Let me explain a little something up front first.  24-ish years ago, when we decided to make it official and get married, I wanted to pick a date that would stick in my then future husbands head so he wouldn’t be one of those “I forgot it was our anniversary” kinda guys we’ve all heard or read about.

So what did the young and naive me do?  I chose Feb 14th as our wedding date.  The dreaded Valentine’s Day.

Now many have thought “Oh, how romantic” but in reality, romantic or not, I didn’t choose it for all the commercialized hype surrounding the holiday.  I just figured “Hey, it’s an easy day to remember especially with all the TV commercials and newspaper ads, there’s no way he’d forget!”  Right.

Well we soon realized how difficult it was to go anywhere and celebrate.  We tried several different things to beat the crowds, even leaving work earlier to get a jump start on our evening out.  Fail.  Once, we were having our anniversary dinner at 3 pm.  Three in the afternoon! Ugh, it was always crazy packed no matter what time of day we decided to go out on that specific date.

We tried having a late dinner one year around 10 pm, which was irritatingly annoying because by the time we got seated, the restaurant was out of just about everything we wanted to eat and that was the last straw.  Numerous times, we ended up getting fast food…not very romantic but it was either that or a big bowl of cereal at home.  Hands down, fast food.

Of course, we couldn’t change the date we got hitched but we could change the day we celebrated it.  So we did.  We began celebrating our anniversary either the week before or the week afterwards and it was great!  It was finally about us and that made a world of difference!  Last year, we went out of town for a wedding a couple weeks after our anniversary and we took advantage of the trip and combined both events, which was really nice.

Here we are 24 years later and we still celebrate our anniversary a week before or after the actual date or we just stay home to watch a movie and get take out, which is also perfectly fine with us both.

Okay, now back to the Chocolate Strawberry Rice Krispy Treats I mentioned earlier.  Yeah, those are pretty AMAZING but I’m partial to most things I make.  So you are just going to have to make these yourself and agree with me!

The ingredients are pretty much straightforward and include rice cereal, marshmallows and butter.  What takes this treat to the next level is the chocolate, strawberry jello and SPRINKLES!

Standard method to make these is melt the butter in a deep pan.  Add the strawberry jello and then the marshmallows.  Stir until the marshmallows are all melted then add in the cereal as pictured above. Stir really good to combine and then pour out mixture into a prepared and buttered 9×13 dish.  Smear your hands with some butter (to prevent sticking) and then smooth out cereal mix by pressing it down with your hands to fill the dish.

Here’s where you can get creative.  Using a cookie cutter, cut out whatever shape you want, and press it into the cereal mix as pictured above.  I used a heart because I was making these for our anniversary, but feel free to use whatever your little heart desires.  Haha, lil “heart” 🙂

Place the cut out treat on some waxed paper and then go melt the chocolate.  Drizzle the treats with chocolate.  Add sprinkles because they’re pretty!  The pictures are proof of that!

If you really, really, REALLY love chocolate, then you can pour the melted chocolate on top of the cut out treats.  Spread the chocolate all over the top of the treat to give it a nice even coat.  Then add the sprinkles.  Again, they’re too pretty to pass up!

Here’s a third option:  Forsake the cookie cutters and just pour the melted chocolate all over the entire Strawberry Rice Krispy Treat itself.  Using the back of a spoon or an offset spatula, spread the melted chocolate all over.

Annnd, I refuse to stop recommending Sprinkles!  It’s way too pretty.  Agree with me and we can move on.  Once the chocolate sets up, you can just bury your face in it or you can cut into small portions like a weirdo 😉  Definitely share with someone you love.  Like I did.

So you see, it’s okay to stay in for an anniversary when this is on the menu.  It’s also okay to go out to enjoy a fantastic meal, have a drink and then come home to indulge in these Chocolate Strawberry Rice Krispy Treats!  Can you guess which one I chose to eat?

Ingredients

Instructions

  • Prepare a 9x13 baking dish by coating with a thin layer of butter. Set aside.
  • In a dutch oven or deep pan, melt butter on medium heat. Add jello powder and stir to combine.
  • Add entire package of Strawberry Marshmallows. Stirring frequently until completely melted.
  • Turn heat off. Add rice cereal and stir to combine well.
  • Pour cereal mix into the buttered dish. Coat hands with butter and smooth cereal into buttered dish by gently pressing it down and around to spread out evenly. Let set for about 5-10 minutes, which gives you time to wash your hands and the dishes.
  • If desired, use a cookie cutter to cut out shapes, placing them on waxed paper.
  • Melt chocolate and drizzle over the rice krispy treats or pour entire cup of melted chocolate over them to give them a nice thick coat.
  • If using sprinkles, this is the best time to add them as the wet chocolate will help them adhere.
  • Let chocolate set up.
  • Enjoy!

    *If you do not have or find Strawberry flavored Marshmallows, use the regular ones in it's place and increase the strawberry jello to 3 tbsp.

    1. Rice Krispies treats are so versatile! Keep posts like this coming! I saw on the Today show a girl who had crazy Rice Krispies treats ideas. They were really spectacular. I think I need to give these a try!

      1. Really!! I would’ve loved to have seen that episode and I agree! They ARE very versatile and they’re always a hit with the kiddos, whether helping make them or just gobbling them down. ??

      1. Hi Karen! I have never tried vegetarian marshmallows unfortunately but marshmallow fluff should work except I think the strawberry flavor might not be as present. You’d have to play with the fluff to cereal ratio to get the correct consistency. If you are able to use the strawberry jello (or a suitable alternative for it), I would think you could add 1 or 2 additional tbsp of it to amp up the strawberry flavor. I’m curious how it’d turn out so please keep me posted should you make them, I’d love to know ??
