The BIG Game is just around the corner and one of my favorite things about it is the FOOD! Yeah, no surprise here!! Every year, chips and dips make their way to our scrumptious spread and with good reason! They’re easy fillers! In my opinion, the DIPS are the game changers in any snack table. This Chile con Queso Party Dip is no different. It’s cheesy, packed with flavor and oh, so EASY to make!
I always, always, ALWAYS get excited coming up with a menu. I get in contact with family and friends to decide who’s coming and who’s bringing what. That’s what us BIG families do…food assignments! We always have a crowd in my little home…grandparents, aunts, uncles, cousins, friends…and kids. Lots and LOTS of kids.

To please everyone, we accumulate a variety of foods, so that there’s something for everyone. Pizza, wings, sandwiches, sliders, little smokies in bbq sauce, veggie/fruit trays, sweets and …chips with dips! Yep, all finger foods with plenty of napkins!
This year, I’ll be passing up on hosting a Game Day Party since my hubby and I will be on vacation for our 25th anniversary. Sad, I know but it’s been a long time coming. We’ll be in Orlando watching the Big Game with take out and a Margarita, I hope! It’ll be a new experience, that’s for sure. Yikes…I haven’t even started packing! My hubby kindly reminded me that the winning team always say they’re going to Disney World the day after the game? We might just have to see about that!
In the meantime, I’m leaving you with one of my favorite dip recipes for Game Day. This Chile con Queso Party Dip is a nice twist to the traditional Queso Dip with salsa that we always make. And this way, you don’t feel that I’ve left without imparting something delicious for your Game Day get together!
This also happens to be a perfect way to use up any leftover ground meat from Taco Night! Mmm, T.A.C.O.S. My forever favorite meal!!! Here’s all you gotta do: Heat up the beans, meat and spices. Then add cheese and chiles and continue cooking until melted. That’s basically it!
Chile con Queso Dip
- 16 oz Velveeta Cheese, cubed/diced
- 10 oz Rotel, drained with liquid reserved I used Mild
- 1 cup Cooked Ground Beef
- 10 oz Ranch Style Beans, drained
- 1/2 tsp Paprika
- 1/4 tsp Cayenne Powder * (optional)
Cube cheese and strain rotel (reserving liquid) and set aside. In a medium saucepan, combine meat, spices and strained beans. Add 2 tbsp of rotel liquid and bring to a simmer.
Add cheese and rotel chiles and stir well. Continue simmering until cheese is melted through. Continue adding rotel liquid a tbsp at a time until desired consistency is achieved. Stir well to combine before transferring to a serving dish.
This Chile con Queso Party Dip makes a large, party sized amount and is perfect for any Game Day crowd! Use your choice of chips and in this recipe, I used the Mild version of Rotel but if you like a fire-y boost, then go stronger. As for the cayenne powder, use or omit altogether.
